I also thought the 'I'm sorry I went with Locke' plot would have been a bit more exciting and epic...a bit more clear cut where it's clear that Hurley regretted going with Locke. But unless I missed it I don't remember seeing or hearing anything like that.

Yeah quite possibly: after a while back in the real world Hurley would have gone over the events again and again in his head, and may have thought that by sticking with Jack in the first place they wouldn't eventually have had to go back for him at the Orchid. And so Hurley feels guilty: like the reason that put him in the mental institute in the first place (feeling guilty about killing all those people by going onto the (dock landing something or other?)) he gets it into his head that by choosing to follow Locke is the action that resulted in all the bad things happening to the helicopter and the escape later on.

But I hope there's something more substantial than that though, or that Hurley will at least make clear reference to it and explain it more later on.

Even though Hurley did completey the right thing by going with Locke!
