That's the sticking point for me as well. I suppose Sun could be treating the tombstone as a shrine and a means of being in contact with Jin even if he's still alive on the island, but Hurley's line would make a lot more sense to me if Jin's body really was in that grave. I also think the story loses some of its impact if Jin turns out not to be dead - surely the shock value was in thinking Jin's flashback was a flashforward and then suddenly realising that he wasn't around in the current timeline. But then again, no-one said for sure that Jin was dead, so it does seem as though the question was left deliberately open.
